Crispy Air-Fried Falafel with Fresh Herbs
Ingredients
  • 1 (15.5 ounce) can chickpeas, rinsed and drained
  • 1 small yellow onion, quartered
  • 3 cloves garlic, minced
  • 1/3 cup roughly chopped parsley
  • 1/3 cup chopped scallions
  • 1/3 cup roughly chopped cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon crushed red pepper flakes
  • 4 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • olive oil cooking spray

Prepare the ingredients by drying chickpeas on paper towels to remove excess moisture. Next, chop the onions and garlic in a food processor fitted with a steel blade until they are finely minced.

Combine the chopped onions, garlic, parsley, scallions, cilantro, cumin, salt, and red pepper flakes in the food processor bowl. Process until all the ingredients are well combined and the mixture is smooth, taking around 30 to 60 seconds.

Add the chickpeas to the food processor bowl and pulse the mixture until it is just blended, but still retains some texture. This should take around 2 to 3 pulses.

Sprinkle the flour and baking powder into the food processor bowl, then scrape down the sides with a spatula to ensure everything is well incorporated. Pulse the mixture again until it is just combined.

Transfer the falafel mixture to a bowl, cover it with plastic wrap, and refrigerate for 2 to 3 hours to allow the flavors to meld together.

Once chilled, use your hands and work surface to shape the falafel mixture into 12 balls. If the mixture is too sticky, add some flour to your hands and work surface to help it hold together.

Preheat an air fryer according to the manufacturer's instructions, setting the temperature to 350 degrees F (175 degrees C). Spray the falafel balls with cooking spray.

Cook the falafel in the preheated air fryer for about 14 minutes, turning them halfway through to ensure even cooking and a golden brown color.
