Creole Chicken Wellington

  • 4 skinless, boneless chicken breast halves, thinly sliced
  • 2 teaspoons Creole seasoning
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 sheets frozen puff pastry, thawed
  • 4 slices cooked bacon, crumbled
  • 4 ounces Brie cheese, cut into 4 slices

Preheat your oven to the highest temperature setting, which is 400 degrees F (200 degrees C). To prevent sticking, lightly coat a baking sheet with a non-stick cooking spray.

In a small saucepan, heat a moderate amount of olive oil over medium heat on your stovetop. Sprinkle chicken breasts with a blend of spices, including Creole seasoning, salt, and pepper; cook until the chicken is evenly browned on both sides, approximately 2 minutes per side. Remove from heat and set aside to rest.

Cut each puff pastry sheet in half lengthwise. Place one sliced chicken breast on each pastry half; add a quarter of the bacon and a slice of Brie cheese. Fold the top and bottom edges of the pastry over the chicken, pressing the edges together with your fingers to seal; position seam-side down on the prepared baking sheet.

Place the pastry-filled chicken in a preheated oven and cook until the pastry is golden brown and the chicken reaches an internal temperature of at least 165 degrees F (74 degrees C), which should take around 15 to 20 minutes. Use a food thermometer to check the internal temperature.
