Creamy Spinach Madeline
Ingredients
  • 2 (10 ounce) packages frozen chopped spinach
  • 1/2 cup water
  • 1/4 cup butter
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chopped onion
  • 1/2 cup evaporated milk
  • 6 ounces processed cheese spread with jalapeno (such as Velveeta(R)), diced
  • 3/4 teaspoon celery salt
  • 3/4 teaspoon garlic salt
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper, or to taste
  • salt to taste
Instructions
1
Begin by placing the frozen spinach and water into a saucepan over high heat, causing it to rapidly come to a rolling boil. Once boiling, decrease the heat to medium and cover the saucepan, allowing it to simmer for 8 minutes. Utilize a fork to gently separate the spinach, and then continue cooking for an additional 2 minutes. Next, carefully pour off some of the cooking liquid, reserving half a cup for later use.
2
Subsequently, melt butter in a saucepan over low heat. Combine the flour with the melted butter, stirring until it forms a uniform and smooth mixture, but avoiding any browning of the ingredients. Allow this blend to cook for 1 to 2 minutes.
3
Add the onion to the saucepan and continue cooking until it becomes soft, yet retains its original color. This process should take anywhere from 5 to 7 minutes.
4
Gradually introduce the evaporated milk and reserved cooking liquid into the saucepan, stirring constantly to prevent any lumps from forming. Continue cooking and stirring until the mixture becomes smooth and thick, taking approximately 3 to 5 minutes.
5
Add the cheese spread, celery salt, garlic salt, pepper, cayenne, and salt to the saucepan. Cook for an additional 2 to 3 minutes, stirring constantly until these ingredients have fully melted.
6
Finally, incorporate the cooked spinach into the saucepan mixture and serve immediately.
