  • 8 ounces fresh mozzarella cheese, cut into small chunks

To create the gnocchi, combine ricotta cheese, eggs, Parmesan cheese, salt, pepper, and garlic powder in a large mixing bowl. Stir until the ingredients are fully incorporated and have an even consistency. Next, add 1 cup of flour to the mixture and blend until a soft dough forms. If the dough is too dry, you can add additional flour as needed to achieve the right consistency.

Divide the dough into 3 or 4 equal portions and shape each portion into a rope, approximately 1/2 inch in thickness. Place the ropes on a lightly floured surface and cut them into 1-inch pieces. Arrange these gnocchi pieces on a lightly floured baking sheet, ready to be refrigerated until needed.
