Creamy Refrigerator Mashed Potatoes
Ingredients
  • 5 pounds potatoes, peeled and cubed
  • 6 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 tablespoon freeze-dried chives
  • salt and pepper to taste
  • 1/8 teaspoon paprika
  • 1/4 cup butter
Instructions
1
Begin by submerging potatoes in a large container and covering them with water. Next, bring the mixture to a rolling boil and generously season it with salt. Allow the potatoes to cook until they become tender, which should take around 20 minutes. Remove from heat and drain off any excess water.
2
Now, combine the cooked potatoes with cream cheese, sour cream, chives, salt, and pepper in a bowl. Use an electric mixer to blend the ingredients together until they form a smooth consistency.
3
Transfer the potato mixture to a storage container, leaving it uncovered. Place the container in the refrigerator to chill until the potatoes are cold.
4
Once the potatoes have cooled, cover them tightly with a lid to prevent any moisture from escaping.
5
When you're ready to serve the potatoes, preheat your oven to 350 degrees F (175 degrees C). Grease a baking dish and carefully spoon the desired amount of potatoes into it. Sprinkle with paprika and dot the top with butter.
6
Finally, bake the potatoes in the oven for 30 minutes, or until they're heated through to perfection.
