Creamy Ras Malai
Ingredients
  • 1 (15 ounce) container whole-milk ricotta cheese
  • 1/4 cup white sugar
  • 3 cups half and half
  • 1 cup white sugar
  • 1/4 teaspoon ground cardamom
  • 1/2 teaspoon rose water
  • 1 pinch saffron
  • 1 tablespoon chopped blanched almonds
  • 2 teaspoons chopped pistachio nuts
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) for optimal results.
2
Combine the ricotta cheese and 1/4 cup of granulated sugar in a bowl using an electric mixer until smooth. Divide the mixture evenly among 12 muffin cups.
3
Place the muffin cups in the preheated oven and bake until a toothpick inserted into the center of each muffin comes out clean, taking 35 to 40 minutes.
4
Allow the muffins to cool in their pans for 10 minutes before transferring them to a wire rack to cool completely.
5
While the muffins are baking, heat the half and half in a saucepan over low heat until it starts to simmer.
6
Simmer the half and half for 10 minutes, stirring occasionally.
7
Add 1 cup of granulated sugar, ground cardamom, rose water, and saffron to the half and half mixture. Continue to simmer for another 2 minutes.
8
Remove the saucepan from the heat and let it cool completely to room temperature.
9
Drizzle the cooled half and half mixture over the cooled cheese balls, creating a visually appealing presentation.
10
Sprinkle toasted almonds and pistachios over the top of the cheese balls, adding a satisfying crunch to the dish.
