Creamy Potato Salad with Chives

  • 1 3/4 pounds new potatoes, halved
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup chopped fresh chives
  • salt and freshly ground black pepper to taste
  • 1/2 cup chopped fresh chives for garnish

Place the potatoes in a saucepan and add just enough water to submerge them completely. Heat the mixture over high heat until it reaches a rolling boil, then reduce the temperature to a low simmer and let cook for approximately 10 minutes or until they are tender. Remove the potatoes from the heat and immediately submerge them in a large container of cold, running water to stop the cooking process.

In a separate bowl, combine the sour cream and mayonnaise in a large mixing container; stir until well combined. Gradually add the cooled potatoes to the bowl, stirring constantly to distribute them evenly. Season the potato mixture with salt and pepper to taste; finish by sprinkling the remaining chives on top of the dish.
