  • 1 quart chicken broth
  • 4 cups Yukon Gold potatoes, peeled and diced
  • 2 cups heavy cream

Heat a large pot over medium heat, allowing the butter to melt and become smooth. Introduce sliced leeks into the pot and sprinkle with salt and pepper, then continue to cook and stir until they reach a tender state, approximately 15 minutes.

Combine the cornstarch with the broth in a separate motion, before pouring it into the pot. Add diced potatoes to the mixture and bring the contents to a rolling boil.

Gradually incorporate heavy cream into the pot, then decrease the heat and let it simmer until the potatoes become soft and palatable, roughly 30 minutes. Before serving, make sure to adjust the seasoning accordingly
