  • 2 pounds cubed pork stew meat
  • garlic powder to taste
  • salt to taste
  • 2 tablespoons cornstarch, or as needed
  • 8 red potatoes
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 sweet onion, diced
  • 1 (11 ounce) can whole kernel corn
  • 1 (14 ounce) can stewed tomatoes
  • 1 (14 ounce) can beef broth
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 1/4 cups milk
  • 1 tablespoon Italian seasoning

Preheat a large skillet over medium heat, then warm olive oil within it. Season the pork chops on all sides with a blend of garlic powder, salt, and pepper, before lightly dusting them with cornstarch. Place the pork chops in the skillet and sear them briefly in hot oil until they develop a light brown color, but are still not cooked through.

Transfer the pork chops to a slow cooker. Add diced potatoes, sliced bell peppers, chopped onion, and frozen corn to the slow cooker along with the pork chops.

Combine tomatoes, broth, condensed soup, milk, and Italian seasoning in a medium-sized bowl until everything is well incorporated; pour the mixture into the slow cooker.

Cook on High for 1 hour. Once the cooking time has elapsed, reduce the heat to Low and continue cooking for at least 1 more hour.
