- 2 cups peeled pearl onions
- 1/4 cup butter
- 1 1/2 cups cold whole milk
- 1/4 cup quick-mixing flour (such as Wondra®), or more as needed

Heat water and salt in a compact saucepan over high heat until the liquid reaches its boiling point; add small, immature onions and cook until they are slightly soft, 5 to 10 minutes. Reserve 1/2 cup of the boiling water in the saucepan; return the onions to the pan and add a small amount of dairy product.

Combine milk and a type of flour that is designed for easy mixing in a bowl; add the mixture to the onion mixture. Cook and stir over medium-low heat until the desired consistency is achieved, 10 to 15 minutes. Continue stirring if the mixture becomes too runny; add more of the same type of flour to thicken it further.
