  • 1 pinch dried oregano
  • salt and ground black pepper to taste
  • 2 cups baby spinach leaves
  • 1/4 cup grated Parmesan cheese

Heat a generous amount of oil in a substantial saucepan over an intermediate heat setting. Introduce the tomato paste and anchovy fillet into the pan, stirring constantly until the mixture becomes aromatic and develops a richer hue, approximately 2-3 minutes.

Next, add the chicken broth to the saucepan and bring the mixture to a rolling boil. Introduce the tortellini and beans into the pan, stirring occasionally until they are cooked through but retain a slight firmness to the bite, roughly 10 minutes.

Subsequently, add the red pepper flakes, oregano, salt, and pepper to the saucepan, stirring to combine. Then, introduce the spinach into the pan, cooking and stirring until it has just begun to wilt, approximately 2-3 minutes.
