Ingredients
- 8 parsnips, peeled and cut into 2 inch pieces
- 2 carrots, peeled and cut into 2-inch pieces
- 6 tablespoons butter, divided
- 1/4 cup snipped chives
- sea salt and freshly ground black pepper to taste

Begin by adding the parsnips and carrots to a substantial container, filling it with sufficient salted water to completely submerge the vegetables. Next, increase the heat to its highest setting and bring the mixture to a rolling boil; thereafter, decrease the intensity of the heat to its lowest setting and cover the container. Allow the vegetables to cook gently for 15 to 20 minutes, or until they have reached a tender state.

Once the vegetables are cooked, remove them from the container and discard any excess water. Return the parsnips and carrots to their original pot.

Turn the heat down to its lowest setting and melt 3 tablespoons of butter into the vegetables. Finally, sprinkle chopped chives over the top of the parsnips and carrots.

Use an immersion blender to blend the vegetables into a nearly uniform consistency; then, add the remaining 3 tablespoons of butter and continue to blend until the mixture is completely smooth.

Finally, season the puréed vegetables with a pinch of salt and a few grinds of black pepper to bring out their full flavor.
