- 1 (.25 ounce) envelope unflavored gelatin
- 2 1/2 cups heavy cream
- 1/2 cup white sugar
- 1 1/2 teaspoons vanilla extract

Place milk in a small container and sprinkle gelatin powder over it, mixing until the two are fully incorporated. Set aside momentarily.

Combine heavy cream and sugar in a saucepan, stirring until they are well combined. Place the saucepan over medium heat and bring the mixture to a boil; be vigilant as the cream can rapidly bubble up and boil over.

Immediately add the gelatin mixture to the boiling cream, stirring until it is completely dissolved. Cook and stir for 1 minute.

Take the saucepan off the heat source and add vanilla, stirring until well combined.

Pour the cream mixture into 6 individual ramekins. Allow it to cool, uncovered, until it is no longer warm, approximately 20 minutes.

Once cooled, cover the ramekins with plastic wrap. Refrigerate until set, ideally for at least 4 hours but preferably overnight.
