Ingredients
- 1/2 cup vegetable oil
- 1/2 pound paneer, cut into 1/2-inch cubes
- 2 tablespoons butter
- 2 onions, finely chopped
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 tablespoon ground cashews
- 1 teaspoon ground red chiles
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon garam masala
- 1 (8 ounce) can tomato sauce
- 1/2 cup half-and-half
- 1/2 cup milk
- 1/2 teaspoon white sugar
- 1/2 teaspoon salt

Heat the oil in a large skillet over medium heat; cook the paneer in batches until it's golden brown, taking around 5 minutes. Remove the fried paneer from the skillet and place it on a paper towel-lined plate to drain excess oil, leaving the vegetable oil in the skillet.

Melt the butter in the same skillet over medium heat; sauté the onion until it's golden brown, taking approximately 10 minutes. Add the ginger paste and garlic paste to the skillet and continue cooking until fragrant, adding an extra minute or so. Stir in the cashews, ground red chiles, cumin, coriander, and garam masala into the onion mixture. Cook for another minute, stirring constantly.

Stir in the tomato sauce, half-and-half, milk, sugar, and salt into the spice mixture; simmer until it thickens, taking around 5 minutes. Lower the heat to a low setting. Add the fried paneer back into the skillet and simmer until it's heated through, taking an additional 5 minutes.
