Creamy Mushroom Risotto
Ingredients
  • 1 tablespoon olive oil
  • 3 small onions, finely chopped
  • 1 clove garlic, crushed
  • 1 teaspoon minced fresh parsley
  • 1 teaspoon minced celery
  • salt and pepper to taste
  • 1 1/2 cups sliced fresh mushrooms
  • 1 cup whole milk
  • 1/4 cup heavy cream
  • 1 cup rice
  • 5 cups vegetable stock
  • 1 teaspoon butter
  • 1 cup grated Parmesan cheese

Preheat a large skillet over medium-high heat, and pour in olive oil. Sear the onion and garlic in the hot oil until it becomes translucent and the onion is soft, while the garlic develops a light golden hue. Take out the garlic, and add in the parsley, celery, salt, and pepper to the pan. Continue cooking until the celery is tender, then introduce the mushrooms into the mixture. Lower the heat to low and keep cooking until the mushrooms are tender.

Introduce milk and cream into the skillet, stirring to combine. Add cooked rice to the pan, and heat it up until a gentle simmer is achieved. Gradually add vegetable stock one cup at a time, stirring constantly to ensure it gets absorbed.

Once the rice has completed its cooking process, stir in melted butter and Parmesan cheese. Remove from heat and serve hot.
