  • 1 1/2 cups whole milk
  • 1 cup white sugar
  • 3 tablespoons semolina flour
  • 1/2 teaspoon ground cardamom

Heat the ghee in a deep, heat-conductive cooking vessel over an intermediate temperature; sauté the cashews in the ghee until they turn a golden hue, approximately 5 minutes. Transfer the cashews to a flat surface for cooling, retaining some of the ghee in the pan and re-heat it on the stovetop. Once the cashews have cooled, roughly chop them.

Combine the milk, sugar, and semolina flour in the remaining ghee within the pan. Bring this mixture to a rolling boil; decrease the heat to a low setting and cook, stirring constantly, until it thickens significantly, approximately 30 to 45 minutes. Introduce the cardamom into the mixture.

Prevent sticking by lightly coating a flat, rimmed serving plate. Pour the milk mixture onto the prepared platter and spread it into an even layer. Sprinkle the chopped cashews over the mixture. Divide the mithai into uniform squares and allow it to cool completely before cutting
