Ingredients
- 2 butternut squash, halved and seeded
- 1 cup water, or as needed
- 3/4 cup sour cream
- 1/2 cup butter
- 1 tablespoon brown sugar
- 1/2 teaspoon ground cinnamon
- salt and ground black pepper to taste
- 2 sprigs fresh parsley, or as desired
- 1 tablespoon sour cream
Instructions
1
Begin by preheating your oven to a high temperature of 350 degrees Fahrenheit, or 175 degrees Celsius for those using metric measurements.
2
Next, take a small knife and carefully prick the skin of the butternut squash all over. Then, position the squash cut-side down in a baking dish and fill it with just enough water to reach a depth of half an inch. Cover the dish with aluminum foil.
3
Then, place the squash in the preheated oven and let it cook until it becomes tender and soft, taking around an hour to achieve this.
4
Once the squash is cooked, carefully remove it from the oven and scoop out the flesh into a bowl.
5
Add 3/4 cup of sour cream, softened butter, brown sugar, ground cinnamon, salt, and black pepper to the bowl with the squash. Use a potato masher or fork to mash everything together until it reaches a smooth consistency.
6
Finally, garnish your squash dish with some chopped fresh parsley and an extra tablespoon of sour cream if you're feeling fancy.
