  • 1 tablespoon lemon juice
  • 2 cups pureed mango
  • 1 (14 ounce) can sweetened condensed milk
  • 2 tablespoons cornstarch
  • 1 tablespoon rum
  • 1 cup evaporated milk
  • 6 eggs, beaten
  • 1 pinch salt

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) by adjusting the temperature setting on your oven. Fill a large, shallow baking dish with approximately 1 and a half inches of water to create a humid environment.

In an 8x13 inch aluminum baking dish, heat it over medium heat and combine the sugar and lemon juice. Continuously stir the mixture until it reaches a deep amber color, known as caramelization. Remove the dish from the heat source and blend in the mango, sweetened condensed milk, cornstarch, rum, evaporated milk, eggs, and salt to create a smooth mixture.

Carefully place the pan with the mango mixture into the baking dish filled with water. Position the dish in the preheated oven and bake for 45 minutes, or until the mixture has reached a firm consistency. Remove from the oven and let it cool before turning it out onto a serving platter.
