  • 1 cup light cream
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1/4 cup sherry
  • 2 cups cooked lobster meat
  • 1/2 cup shredded Parmesan cheese
  • 1 pinch salt and ground black pepper to taste

Heat 2 tablespoons of oil in a large, deep skillet over medium heat. The onions will start to soften and develop a rich, caramelized flavor after about 20 minutes of gentle stirring.

Next, bring the chicken broth to a rolling boil in a large pot and then reduce the heat to low. The broth should simmer gently, maintaining its temperature, for an extended period.

In a separate large, flat-bottomed pan, heat the remaining 2 tablespoons of oil over medium-high heat. The shallot and garlic will quickly become fragrant, releasing their natural aroma after about 2 minutes of constant stirring.

Add the Arborio rice to the pan with the shallot mixture and continue to cook, stirring occasionally, until the rice begins to develop a golden-brown color. This should take about 3 minutes.
