Creamy Irish Potato Casserole
Ingredients
  • 8 large russet potatoes
  • 1 tablespoon butter
  • 1/2 small onion, minced
  • salt and ground black pepper to taste
  • 1/2 cup butter, melted
  • 1/2 cup heavy whipping cream
  • 1/2 cup half-and-half
  • 1/4 teaspoon paprika
  • 2 tablespoons chopped fresh parsley
Instructions
1
Begin by submerging the potatoes in a large container filled with salted water, then heat it up until boiling point. Allow the potatoes to cook for 10 minutes before draining them.
2
Next, let the cooked potatoes sit at room temperature until they have cooled down enough to handle. Remove the skin from the potatoes and discard it, then refrigerate them until they have chilled completely, approximately 1 hour.
3
Preheat your oven to a temperature of 350 degrees Fahrenheit (175 degrees Celsius).
4
Melt 1 tablespoon of butter in a 9x13-inch baking dish and grease it evenly.
5
Take 2 of the potatoes and grate them into the prepared baking dish. Sprinkle a quarter of the minced onion over the layer of grated potato, and season with salt and black pepper. Continue this process until all ingredients have been used up and the dish is full.
6
Drizzle melted butter, whipping cream, and half-and-half over the potato mixture. Add a pinch of paprika for extra flavor.
7
Place the dish in the preheated oven and bake until the top is bubbling, taking around 30 minutes.
8
Finally, garnish your dish with chopped fresh parsley before serving.
