- 1 head cabbage, chopped
- 1 bunch green onions, chopped
- 1/4 cup butter, softened
- 1/2 cup half-and-half cream
- salt and black pepper to taste

Fill a large saucepan with water, adding the potatoes, cabbage, and green onions as you go. Bring the mixture to a rolling boil before lowering the heat and placing a lid on top, allowing it to gently simmer for 20 minutes or until the potatoes are tender.

Once cooked, carefully pour off the water and transfer the vegetables to a large serving bowl. Use a fork to mash the potatoes and vegetables together, gradually incorporating half-and-half as you work until you achieve a chunky consistency. Finally, add a pinch of salt and a few grinds of pepper to taste
