  • 2 quarts milk
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon ground nutmeg

Combine eggs and sugar in a cooking vessel; mix until smooth and airy, with a consistency that resembles whipped cream. Combine the egg mixture with 2 cups of milk and whisk until fully incorporated and free of lumps.

Heat the mixture over a medium flame; stir constantly until it reaches a consistency where it forms a smooth, even film on the back of a spoon, approximately 5 minutes.

Allow the mixture to rest for 5 minutes after removal from heat; this will enable it to thicken and set properly.

Add the remaining 6 cups of milk, a dash of vanilla extract, and a pinch of nutmeg to the mixture; stir until well combined.
