  • 6 medium potatoes
  • 1/2 cup butter, divided
  • 1 medium white Spanish onion, chopped
  • 1 1/2 cups grated medium Cheddar cheese
  • 1 1/4 cups light cream, or as needed
  • 2 teaspoons Dijon mustard
  • 1 teaspoon lemon juice
  • salt and ground black pepper to taste
  • 1 1/2 pounds white fish - skinned, boned, and cut into chunks
  • 1/2 pound fresh shrimp, peeled and deveined

Firstly, set the oven to its highest temperature setting, which is 400 degrees Fahrenheit or 200 degrees Celsius.

Next, carefully make a small incision in each potato and arrange them on a baking sheet.

Then, place the potatoes in the preheated oven and let them cook for approximately 1 hour and 10 minutes, or until they can be easily pierced with a fork.

While the potatoes are almost done, melt 1/4 cup of butter in a skillet over medium heat. Add some sliced onion and cook, stirring occasionally, until it becomes soft and translucent, taking around 5 minutes.

Mix in the grated Cheddar cheese, a splash of cream, a dash of mustard, and some juice from a lemon. Season with salt and pepper to taste.

Continue cooking the sauce, stirring frequently, until it's warm and the Cheddar has melted, which should take around 3 to 5 minutes. Remove it from the heat source.

Place the white fish and shrimp in a 3 1/2-quart oven-safe dish. Pour the cheese sauce over them and stir until everything is well combined.

Scoop out the flesh from the baked potatoes and transfer it to a large bowl. Discard the potato skins.

Add the remaining 1/4 cup of butter to the bowl and season with salt and pepper. Use a fork to mash everything together until the butter has melted and the potatoes are smooth.
