- 6 slices bacon, diced
- 2 stalks celery, diced
- 1 onion, diced
- 1/4 cup butter
- 2 tablespoons all-purpose flour
- 3 (8 ounce) jars clam juice
- 1 quart half-and-half cream
- 4 cups minced clams
- ground white pepper, to taste

Heat a medium-sized skillet over an intermediate temperature, cooking the bacon, celery, and onion until the onion becomes transparent.

Remove the skillet from heat and set it aside momentarily.

In a large saucepan, melt butter over an intermediate temperature. Combine the flour with the melted butter to create a smooth paste, cooking until it reaches a bubbly state. Whisk in 1 jar of clam juice continuously, ensuring the mixture is smooth and free of lumps. Introduce the onion mixture into the saucepan, stirring gently to combine. Gradually pour in half-and-half while continuously stirring the mixture. Stir in clams, decrease the heat and let it simmer for 30 minutes.
