- 1/4 pound chicken livers, trimmed and chopped
- 2 tablespoons dry sherry
- 1/3 (8 ounce) package cream cheese, softened
- hot sauce to taste
- salt and pepper to taste

Heat a medium-sized saucepan over a moderate flame, allowing the butter to soften and melt. Introduce minced garlic, diced onion, and chicken livers into the saucepan, stirring to combine. Gradually decrease the heat to a lower setting and cook for an extended period of time, or until the chicken livers become tender and lose their pink hue, approximately 10 minutes.

Transfer the mixture from the saucepan to a blender and add dry sherry, softened cream cheese, hot sauce, salt, and pepper. Blend the ingredients until they form a uniform consistency; then transfer them to a medium-sized bowl. To achieve optimal results, cover the pâté and refrigerate it for approximately 2 hours before serving.
