Creamy Chicken Enchiladas Suizas

  • 6 skinless, boneless chicken breast halves
  • 1 tablespoon butter
  • 1 cup chopped onion
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 cups shredded Cheddar cheese
  • 1 (4 ounce) can diced green chile peppers
  • 1 cup green salsa
  • 1 cup chopped fresh cilantro
  • 4 teaspoons ground cumin
  • 2 chipotle peppers in adobo sauce, chopped
  • salt and ground black pepper to taste
  • 12 (7 inch) flour tortillas
  • 10 ounces shredded Monterey Jack cheese
  • 1 cup whipping cream
  • 1/2 cup chicken broth

Boil water in a large pot until it reaches a rolling boil, then add the chicken to the boiling liquid; cover the pot and cook for 15-20 minutes, or until the chicken is cooked through. Remove from heat and set aside.

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly grease a 10x15 inch baking dish with cooking spray.

Melt butter in a skillet over medium heat, then sauté the onion, green bell pepper, and red bell pepper until they're tender but still crisp, about 5-8 minutes. Transfer the vegetables to a large bowl and set aside.

Add the cooked chicken, shredded Cheddar cheese, diced green chile peppers, salsa, chopped cilantro, ground cumin, and chipotle peppers to the bowl with the vegetables. Mix well to combine.

Season the mixture with salt and pepper, then mix again until everything is fully incorporated.

To assemble the enchiladas, place about 1/3 cup of the chicken mixture along one edge of a tortilla and roll it tightly into a tube. Place the rolled enchilada seam-side down in the prepared baking dish. Repeat with the remaining tortillas and chicken mixture.

Sprinkle Monterrey Jack cheese over the top of the enchiladas. In a small bowl, whisk together whipping cream and chicken broth until smooth. Pour the cream mixture over the enchiladas.

Cover the dish with aluminum foil and bake in a preheated oven for 30 minutes. Remove the foil and continue baking until the cheese is melted and bubbly, about 10 minutes more.
