Creamy Chicken Asparagus Bake
Ingredients
  • 1 (8 ounce) package egg noodles
  • 1 1/3 tablespoons olive oil
  • 1 onion, chopped
  • 1 cup chopped, cooked chicken meat
  • 1 red bell pepper, chopped
  • 2 stalks celery, chopped
  • 1 cup chicken stock
  • 1 1/2 cups sour cream
  • 1/2 teaspoon dried oregano
  • 1 pound fresh asparagus, trimmed and cut into 2 inch pieces
  • 8 tablespoons grated Parmesan cheese, divided
Instructions
1
Collect all necessary components for the recipe.
2
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
3
Carefully coat a 1 1/2-quart casserole dish with a thin layer of oil to prevent sticking.
4
Fill a substantial pot with salted water and bring it to a high rolling boil.
5
Cook egg noodles in the boiling water until they are almost tender, taking approximately 5 minutes.
6
Drain the noodles thoroughly to remove excess water.
7
Heat a generous amount of olive oil in a large, heavy skillet over medium heat.
8
Combine the onion and heat it for 4 to 5 minutes, stirring constantly to prevent burning.
9
Add cooked chicken, red bell pepper, celery, and chicken broth to the skillet.
10
Bring the mixture to a boil and then simmer it for 5 minutes, stirring occasionally.
11
Stir in sour cream and oregano to enhance the flavor.
12
Spread half of the chicken mixture into the prepared casserole dish; arrange asparagus on top.
13
Spread cooked noodles evenly over the asparagus and sprinkle 5 tablespoons of Parmesan cheese on top.
14
Cover the dish with the remaining chicken mixture and sprinkle the remaining 3 tablespoons of Parmesan cheese on top.
15
Bake the dish in the preheated oven until the cheese has melted and the top is golden brown, taking approximately 30 minutes.
