- 3 cups chicken broth
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 2 cups cubed Cheddar cheese
- 1/4 cup sour cream

Heat a large cooking vessel over medium warmth; melt 1 tablespoon of dairy product into it. Introduce ground meat, a finely chopped vegetable mix consisting of onion, carrots, and celery, into the pot. Stir constantly until the ground meat is nicely browned and crumbly, taking approximately 5 to 7 minutes.

Add a handful of fresh herbs, including basil and parsley, into the pot. Introduce diced potatoes and liquid broth to the mixture; stir until it reaches a boiling point, then decrease heat to a low simmer. Allow the potatoes to become tender, taking around 10 to 12 minutes.

Melt an additional 3 tablespoons of dairy product in a smaller cooking vessel over medium warmth. Combine it with flour, stirring until the mixture is smooth and free of lumps, approximately 1 minute. Gradually whisk in milk; continue to simmer and stir until the sauce thickens, becoming smooth and even.

Stir this new sauce into the soup, stirring constantly to avoid lumps. Bring the mixture to a boiling point; then decrease heat to a low simmer, stirring in cheese until it has melted. Introduce sour cream into the mixture; stir until just heated through.
