- 2 cups whole milk
- 2 cups water
- 1 1/2 teaspoons kosher salt
- 1 cup polenta or yellow cornmeal
- 4 tablespoons unsalted butter
- 1/2 teaspoon freshly ground black pepper
- 4 ounces sharp Cheddar cheese, shredded

Combine milk, water, and kosher salt in a large pot over medium-high heat; bring to a rolling boil. Gradually incorporate polenta into the boiling milk-water mixture, stirring constantly to avoid lumps.

Reduce heat to a low simmer and cover the pot with a lid, allowing it to cook gently for approximately 20 minutes or until it reaches a creamy consistency.

During this time, periodically lift the lid and gently stir the mixture to prevent it from sticking to the pot.

Once the cooking time has elapsed, remove the pot from the heat source and stir in butter until it is fully incorporated.

Continue stirring until pepper is also well combined with the mixture.

Finally, gradually stir in cheese until it has melted and the sauce is smooth. Serve the dish hot.
