Creamy Chanterelle Risotto

  • 2 cloves chopped fresh garlic
  • 2 cups sliced chanterelle mushrooms
  • 2 tablespoons butter
  • 2 cups Arborio rice
  • 5 cups vegetable broth
  • 2 cups freshly grated Parmesan cheese
  • salt and ground black pepper to taste

Heat 2 tablespoons of butter in a substantial pan over a moderately high temperature. Sear and blend garlic and mushrooms in the melted butter until they acquire a light brown hue, approximately 3 minutes. Set aside momentarily.

Heat 2 tablespoons of butter in a substantial saucepan over a moderate heat setting. Introduce rice into the pan; cook for 1 to 2 minutes. Gradually add vegetable broth 1/2 cup at a time, stirring constantly and allowing the liquid to be fully absorbed before adding more broth. Continue cooking until the rice is tender enough to break easily with your teeth.

Combine the mushroom mixture into the pan and cook until it reaches a heated state, roughly 1 minute. Introduce Parmesan cheese into the mixture; season with salt and pepper to taste.
