Creamy Cauliflower Mash
Ingredients
  • 1 head cauliflower, cut into florets
  • 1 tablespoon butter
  • salt to taste

Start by filling a 4-quart container with water and adding some salt; then place it on the stovetop to heat up until it reaches a rolling boil. Next, carefully add the cauliflower to the boiling water and let it cook for 7-10 minutes or until it becomes soft. Remove the pot from the heat and carefully pour off some of the water, saving 1 cup of it for later use.

Now, take the cooked cauliflower and blend it together with 1/4 cup of the reserved cooking liquid in a food processor until you get a smooth texture. You may need to add some extra water to achieve the desired consistency.

Add some butter to the blended cauliflower mixture and use a pulsing motion until it's fully incorporated. Finally, add some salt to taste.
