Creamy Calamari Pasta
Ingredients
  • 1/2 pound linguine pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, crushed
  • 8 ounces squid, cleaned and cut into rings and tentacles
  • 3/4 cup white wine
  • 3 cherry peppers, thinly sliced
  • 2 tablespoons cornstarch
  • 1 cup cream
  • 1/2 cup shredded fresh basil
  • crushed red pepper flakes to taste
  • salt and pepper to taste
  • 1/4 cup freshly grated Parmesan cheese
Instructions
1
Boil a large container of water and add salt, then bring it to the point where bubbles constantly rise to the surface.
2
Add pasta and cook until it reaches a soft yet springy texture, 8 to 10 minutes; drain the water.
3
Heat oil in a large pan over an elevated heat level. Cook and stir minced garlic in hot oil until it turns golden, 1-2 minutes.
4
Add squid and cook until it changes color to a white hue. Stir in white wine and cherry peppers; bring the mixture to a gentle simmer and cook until the liquid is reduced by half, about 3 minutes.
5
Mix cornstarch into a small portion of cream in a separate bowl, then add it to the simmering squid mixture. Season with basil, red pepper flakes, salt, and pepper; stir until the sauce thickens.
6
Combine cooked pasta with the squid mixture and toss to ensure an even coating. Sprinkle Parmesan cheese on top for serving.
