- 2 1/2 cups shredded sharp Cheddar cheese
- salt and ground black pepper to taste

Heat a skillet over medium-high heat and melt 1 tablespoon of butter, allowing it to reach its liquid state. Add the onion to the skillet and stir constantly until it reaches a tender, translucent consistency, approximately 5 minutes.

Next, combine the remaining 1/4 cup of melted butter with flour in a large saucepan over medium-low heat. Continuously whisk the mixture and cook, adding 1 to 2 tablespoons of milk as needed to prevent the flour from burning, approximately 3 to 4 minutes.

Now, gradually add milk while continuously whisking the mixture; stir in chicken stock and bring to a gentle boil. Cook until the mixture thickens, roughly 20 minutes.
