Ingredients
- 1 cup white sugar
- 4 eggs, separated
- 1 (14 ounce) can sweetened condensed milk
- 3/4 cup milk, plus
- 2 tablespoons milk
Instructions
1
First, preheat the oven to 350 degrees F (175 degrees C), preparing it for the cooking process.
2
Melt sugar in a heavy saucepan over low heat, stirring constantly to prevent scorching. Continue cooking until the sugar transforms into a golden brown syrup, taking approximately 10 minutes to achieve this. Remove from heat immediately and pour the caramel syrup into a round baking dish, gently swirling it to coat the sides evenly. Allow this mixture to cool and set.
3
Next, blend egg yolks in a blender on medium speed for 5 minutes to break them down. Add condensed milk, 3/4 cup plus 2 tablespoons of milk, and egg whites to the blender. Continue blending until all ingredients are well combined. Pour this mixture over the hardened caramel syrup in the baking dish, then cover it with aluminum foil to prevent drying out.
4
Prepare a roasting pan by lining it with a damp kitchen towel, which will help prevent the baking dish from sticking. Place the baking dish inside the roasting pan and then position the roasting pan on the oven rack. Fill the roasting pan with boiling water to reach halfway up the sides of the baking dish.
5
Bake the flan in the preheated oven until a knife inserted 1 inch from the edge comes out clean, taking about 45 to 50 minutes. The center of the flan will still be soft and slightly jiggly. Remove from the oven and allow it to cool before unmolding onto a plate.
6
Refrigerate the flan before serving, as it will be more stable and easier to consume.
