Creamy Blue Cheese and Bacon Potato Salad
Ingredients
  • 2 boneless pork loin chops, butterflied
  • 4 ounces crumbled blue cheese
  • 2 slices bacon - cooked and crumbled
  • 2 tablespoons chopped fresh chives
  • garlic salt to taste
  • ground black pepper to taste
  • chopped fresh parsley for garnish
Instructions
1
Preheat your oven to the optimal temperature of 325 degrees Fahrenheit (165 degrees Celsius).
2
To prevent sticking, lightly coat the bottom of a shallow baking dish with oil or cooking spray.
3
In a tiny container, combine the pungent blue cheese, crispy bacon, and fragrant chives. Split the mixture in half and shape each portion into a loose ball. Place one of these balls inside the cavity of a pork chop, seal it by closing the opening and securing with small sticks. Add a pinch of garlic salt and pepper to each chop, keeping in mind that the blue cheese can be quite salty.
4
Place the stuffed pork chops into the prepared baking dish, ensuring they are snugly fitted.
5
Bake the pork chops in the preheated oven for 20 minutes, or adjust the time according to the thickness of your chops. Continue cooking until the filling is hot and the pork reaches your preferred level of doneness.
6
Finish by sprinkling fresh parsley leaves over the dish and presenting it to your guests.
