Preheat your oven to a medium-high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer). Next, take a 2-quart casserole dish and give it a light coating of cooking spray to prevent sticking.

In a large mixing bowl, combine Parmesan cheese, mayonnaise, finely chopped onion, diced bell pepper, and beaten eggs. Add in some grated zucchini, a pinch of salt, and a few grinds of pepper, then mix everything together until it's smooth and well combined.
