- 3/4 cup crumbled feta cheese
- 1 tomato, diced
- 1 (6 ounce) can chopped black olives
- 1/4 onion, chopped
- 1/4 cup chopped fresh spinach

Preheat the outdoor grill to a medium-high heat level and lightly brush the metal grates with oil to prevent sticking.

Cut each chicken breast in half horizontally, from one side through the middle, leaving about half an inch of meat on each side. Carefully split the two halves apart and lay them flat, resembling an open book.

Mix together a blend of cream cheese, crumbled feta cheese, diced tomatoes, pitted olives, sautéed onion, and chopped spinach in a large bowl. Spoon the cheese mixture evenly onto one side of each opened chicken breast, making sure to cover the entire surface. Fold each chicken breast back over itself and wrap it tightly in a sheet of aluminum foil.

Place the wrapped chicken breasts on the preheated grill and cook until they reach an internal temperature of 165 degrees F (74 degrees C), as indicated by an instant-read thermometer inserted into the center. This should take around 15 to 20 minutes, or until the chicken is cooked through and the juices run clear.
