Heat a large skillet over medium-high heat and cook the sausage until it reaches a browned, crumbly state. This should take around 10 minutes; then drain the excess fat.

Unroll a single package of crescent dough on a flat surface and merge any perforations to form an uninterrupted sheet.

Apply half of the cream cheese to the dough, ensuring a 1/2-inch border on each edge remains intact.

Sprinkle half of the cooked sausage evenly over the cream cheese layer.

Using a long edge as a starting point, roll the dough into a compact log shape; wrap it in plastic film or parchment paper. Repeat this process to create and wrap a second roll.
