Ingredients
- cooking spray
- 1 cup chunky salsa
- 6 ounces cream cheese, softened
- 3 cups shredded, cooked chicken
- 8 (8 inch) flour tortillas
- 1 (15 ounce) can enchilada sauce
- 1/2 cup shredded Mexican cheese blend
Instructions
1
Preheat your oven to the desired temperature of 375 degrees Fahrenheit or 190 degrees Celsius.
2
Cover a baking sheet with aluminum foil and spray it lightly with cooking spray to prevent sticking.
3
In a large pan, combine the salsa and cream cheese over medium heat.
4
Allow them to blend together smoothly as you stir constantly, until the cream cheese is fully incorporated and the mixture has a smooth consistency.
5
This should take around 3 to 5 minutes.
6
Add the chicken to the pan and stir until it's heated through, taking around 2 to 3 minutes.
7
Using your hands or a spoon, fill tortillas with the chicken mixture and roll them into tight, sealed shapes.
8
Place these rolled tortillas seam-side down on the prepared baking sheet.
9
Pour enchilada sauce over the rolled tortillas and bake in a preheated oven for 10 minutes.
10
Add Mexican cheese on top of the baked enchiladas and continue baking until the cheese is melted, taking an additional 5 to 10 minutes.
11
Serve your enchiladas hot and enjoy.
