Crawfish Party Dip

  • 1/2 cup butter
  • 2 pounds crawfish tails, with fat
  • 4 (8 ounce) packages cream cheese, room temperature
  • 1 bunch green onions, chopped
  • 1 cup mayonnaise
  • 1/2 teaspoon hot pepper sauce (e.g. Tabascoâ„¢), or to taste
  • 1 teaspoon Worcestershire sauce, or to taste

Heat a large skillet over medium heat, allowing butter to melt and become smooth. Add half of the chopped green onions and cook until they have lost their crunch, becoming tender.

Next, add the crawfish tails to the skillet and lower the heat to medium-low. Allow them to simmer gently for approximately 10 minutes, until they are cooked through.

Remove the skillet from the heat and let it cool down slightly. Set the crawfish aside to chill.

In a separate large bowl, combine softened cream cheese and mayonnaise using an electric mixer until they are fully incorporated. I find it helpful to use this type of mixer for this particular task.

Add a dash of hot pepper sauce and Worcestershire sauce to the bowl, stirring until the mixture has achieved a pink hue. At this point, it's ready to be combined with the cooled crawfish and butter.

Once the crawfish have had time to cool slightly, add them to the bowl along with the remaining green onions and melted butter. Mix everything together thoroughly, cover the bowl, and refrigerate it overnight to allow the flavors to meld.
