Ingredients
- 2 1/4 cups all-purpose flour
- 1 tablespoon pumpkin pie spice
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups white sugar
- 1 (15 ounce) can pumpkin puree
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup dried cranberries
- 1 cup chopped walnuts

Preheat your oven to a medium-high temperature of 350 degrees F (175 degrees C).

Next, take two 9x5-inch loaf pans or four mini loaf pans and give them a light coating of oil and a dusting of flour to prevent sticking.

In a separate mixing bowl, whisk together the dry ingredients consisting of flour, pumpkin pie spice, baking powder, and salt until well combined.

In another mixing bowl, use an electric mixer to cream together sugar, pumpkin purée, eggs, and oil until just blended.

Mix the wet ingredients into the dry ingredients using a wooden spoon until you achieve a batter that is just moistened, still retaining some texture.

Gently fold in the cranberries and walnuts into the batter to add natural sweetness and crunch.

Spoon the prepared batter into the greased and floured loaf pans.
