Cranberry Pineapple Salad
Ingredients
  • 2 (3 ounce) packages raspberry flavored Jell-O® mix
  • 1 (16 ounce) can whole cranberry sauce
  • 1/2 teaspoon orange zest
  • 1/3 cup orange juice
  • 2 tablespoons lemon juice
  • 1 (20 ounce) can pineapple tidbits, drained
  • 3/4 cup sliced celery

Remove the syrup from the pineapple and pour it into a separate container, reserving it for later use. Next, add enough water to the reserved syrup to bring its total volume to 1 cup.

In a saucepan, heat the pineapple juice over medium heat until it reaches a rolling boil. Add the gelatin and continue stirring until it has fully dissolved into the liquid. Remove the saucepan from the heat source.

Add the cranberry sauce, orange peel, orange juice, and lemon juice to the saucepan with the gelatin mixture. Blend all the ingredients together until they are well combined.

Allow the mixture to cool slightly, until it has thickened just enough to handle.

Add the pineapple and celery to the mixture and stir until they are fully incorporated.

Pour the mixture into a mold or an 8-inch square pan. Refrigerate until it has firmed up, approximately 2 hours.
