  • 1 3/4 cups white sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup butter, melted
  • 2 cups fresh cranberries
  • 1 cup mandarin oranges, drained
  • 3/4 cup milk
  • 3/4 cup sour cream
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract
  • 1 tablespoon white sugar

Preheat your oven to a high temperature of 400 degrees Fahrenheit or 200 degrees Celsius.

Next, take some butter and rub it all over a large rectangular baking dish to prevent the bread from sticking.

In another bowl, combine 2 and three-quarters cups of flour with one and three-quarters cups of sugar, a pinch of baking powder, a small amount of salt, and some baking soda. Mix everything together until it's well combined.

Add the melted butter to the bowl and use a spoon or whisk to mix until the mixture resembles coarse crumbs.

Now, set aside one-quarter cup of cranberries and mandarin oranges for later use. Mix the remaining ingredients together until they're well combined.

In a separate bowl, whisk together some milk, sour cream, eggs, and flavorings until the mixture is smooth.

On top of the batter, sprinkle some reserved cranberries and mandarin oranges - one-quarter cup each.

Finally, add a small amount of sugar on top of the cranberries and mandarin oranges.

Bake your bread in a preheated oven for 5 minutes, then reduce the heat to 350 degrees Fahrenheit or 175 degrees Celsius and continue baking until the center of the bread springs back when you press it gently, which should take around 35 to 40 minutes more.
