Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/3 cups fresh cranberries
- 3/4 cup orange juice
- 1/2 cup white sugar
- 1/3 cup butter, melted, cooled
- 1 egg
- 1 orange, zested
- 1 cup powdered sugar
- 1 tablespoon orange juice, or more as needed
- 1 pinch grated orange zest
Instructions
1
Preheat your oven to a medium-high temperature of 375 degrees Fahrenheit (or 190 degrees Celsius, if you prefer). To ensure easy removal, line a 12-cup muffin tin with individual paper cups.
2
Mix together the dry ingredients, including flour, baking powder, baking soda, and salt, in a large bowl. Combine this with the dried cranberries.
3
In another bowl, blend 3/4 cup of freshly squeezed orange juice, white sugar, melted butter, egg, and the grated zest from 1 orange until smooth. Gently fold this mixture into the dry ingredients just until they're evenly moistened, without overmixing.
4
Fill each prepared muffin cup with the mixture and bake in a preheated oven until they're lightly browned on top and firm to the touch, taking 15 to 20 minutes. Allow them to cool in the tin for 5 minutes before transferring them to a wire rack to continue cooling for another 20 minutes.
5
Simultaneously, whisk together confectioners' sugar, a small amount of freshly squeezed orange juice, and a pinch of grated orange zest in a tiny bowl. If the mixture is too thick, add more orange juice until you achieve your desired consistency. Drizzle this glaze over the cooled muffins.
