Cranberry Glazed Pork Loin Roast
Ingredients
  • 1 (14.5 ounce) can whole berry cranberry sauce
  • 1 cup apple jelly
  • 1 tablespoon Dijon mustard
  • 4 cubes chicken bouillon, crushed
  • 1 teaspoon prepared horseradish
  • 2 teaspoons garlic powder
  • 2 tablespoons chopped fresh thyme
  • 1 (4 pound) boneless pork loin roast
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
Instructions
1
Preheat your oven to a high temperature of 425 degrees Fahrenheit, or 220 degrees Celsius.
2
In a saucepan, merge the cranberry sauce, apple jelly, mustard, crushed bouillon, horseradish, garlic powder, and thyme. Bring the mixture to a rolling boil.
3
Cover a large baking pan with aluminum foil, then position the pork loin inside it, fat side facing upwards. Sprinkle a generous amount of salt and pepper over the pork to taste.
4
Utilize a pastry brush and a small spoon to thoroughly coat the pork with the prepared sauce, ensuring an even distribution of flavors.
5
Place the baking pan in a preheated oven and cook until the pork reaches an internal temperature of 145 degrees Fahrenheit, or 63 degrees Celsius, and is no longer pink in the center. This should take approximately 45 minutes, with regular basting of the remaining sauce every 10 minutes.
