Cranberry Apple Ginger Chutney
Ingredients
  • 4 cups fresh cranberries
  • 1 cup raisins
  • 1 cup water
  • 3/4 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon minced fresh ginger root
  • 1/4 teaspoon ground cloves
  • 1/2 cup minced onion
  • 1/2 cup chopped Granny Smith apple
  • 1/2 cup finely chopped celery

Combine cranberries, raisins, water, granulated sugar, brown sugar, cinnamon sticks, ground ginger, and whole cloves in a saucepan. Place the saucepan over medium-high heat and bring the mixture to a rolling boil.

Reduce the heat to low and let it simmer gently for about 5 minutes, or until the berries start to burst.

Add diced onion, chopped apple, and sliced celery; continue to cook, stirring occasionally, until the mixture starts to thicken and reduce in volume.

Transfer the sauce to a bowl and let it cool down slightly, about 15 minutes.

Cover the bowl with plastic wrap or aluminum foil and refrigerate it until the flavors have fully melded together, preferably 8 hours to overnight.
