  • 2 (8 ounce) filet mignon steaks
  • coarse sea salt and coarsely ground black pepper to taste
  • 1 pound fresh lump crabmeat
  • 3 tablespoons butter, melted and cooled
  • 2 tablespoons olive oil

Preheat your oven to the highest temperature it can reach, which is 425 degrees Fahrenheit or 220 degrees Celsius.

Gently remove excess moisture from the filets by patting them dry with a paper towel. Then, sprinkle both sides of the filets with salt and black pepper to taste.

In a separate bowl, gently combine the cooled melted butter with the crabmeat until they are evenly coated. Set this mixture aside for now.

Heat a generous amount of olive oil in a large, heavy skillet over the medium-high heat setting until it reaches a hot but not smoldering state.

Carefully place the filets in the skillet and sear them on both sides for approximately 3 minutes per side, or until they are nicely browned.

Transfer the filets to a baking sheet that has been lightly oiled, making sure they are not touching each other.

Place the filets in the preheated oven, on the middle rack, and roast until they start to firm up and turn a reddish-pink color in the centers. This should take around 10 minutes.

Check the internal temperature of the filets by inserting an instant-read thermometer into their centers. The ideal reading is 130 degrees Fahrenheit or 54 degrees Celsius.
