Ingredients
- 1 1/2 pounds flounder fillets
- 1 cup crabmeat - drained, flaked and cartilage removed
- 3 crushed saltine crackers
- 1 tablespoon finely chopped green bell pepper
- 1/4 teaspoon ground dry mustard
- 1/4 teaspoon Worcestershire sauce
- 1/4 teaspoon salt
- ground white pepper to taste
- 1 egg white
- 1 tablespoon mayonnaise
- 1/4 cup butter, melted
- 1 egg yolk
- 5 tablespoons mayonnaise
- 1 tablespoon dried parsley
- 1/2 teaspoon paprika
Instructions
1
Gather all the necessary ingredients and prepare your oven for cooking. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). Next, take your flounder fillets and gently rinse them under cold water to remove any impurities. Use paper towels to pat the fillets dry, ensuring they are free of excess moisture.
2
Prepare a shallow baking dish by lightly coating it with butter or cooking spray. Now, let's move on to the crab mixture. In a medium-sized bowl, combine the crabmeat, crushed saltines, diced bell pepper, mustard, Worcestershire sauce, salt, and white pepper. Mix these ingredients together until they are well combined.
3
In a separate small bowl, whisk the egg white and mix it with 1 tablespoon of mayonnaise. Add this mixture to the crabmeat mixture and stir until everything is well incorporated.
4
Take your flounder fillets and brush them with melted butter. Place the fillets in the prepared baking dish, making sure they are not overlapping each other. Spoon the crabmeat mixture over the fillets and drizzle with any remaining melted butter.
5
Place the baking dish in the preheated oven and bake for 15 minutes. While the fish is cooking, prepare the topping mixture. In a small bowl, beat the egg yolk gently and mix it with 5 tablespoons of mayonnaise. Remove the fish from the oven and spread this mixture over the crabmeat mixture; sprinkle with parsley and paprika.
6
Increase the oven temperature to 450 degrees Fahrenheit (230 degrees Celsius) and bake until the topping is golden brown and bubbly, approximately 5 or 6 minutes.
