Ingredients
- 1 1/3 cups water
- 2/3 cup uncooked long grain white rice
- 3 tablespoons vegetable oil
- 2 medium onions, cut into wedges
- 3 cloves garlic, chopped
- 2 teaspoons salt
- 1/2 tablespoon white sugar
- 1 egg, beaten
- 1/4 pound cooked crabmeat
- 3 green onions, chopped
- 1 tablespoon chopped cilantro
- 1/2 cucumber, sliced
- 1 lime, sliced
Instructions
1
Combine water and rice in a cooking vessel; heat until it reaches a rolling boil. Lower the temperature, cover the pan, and let it cook gently for 20 minutes or until all the liquid has been absorbed.
2
Set the cooked rice aside momentarily.
3
In a hot skillet, heat oil over an average temperature setting. Sauté the onions and garlic in the hot oil until they are soft and fragrant. Combine cooked rice, salt, and sugar; cook for a few minutes, stirring occasionally, until everything is well combined.
4
Add beaten egg to the rice mixture and stir until it's evenly coated.
5
Increase the heat in the skillet to a high level. Combine crabmeat, green onions, and cilantro into the rice mixture; cook and stir until the crab is heated through, approximately 2 to 5 minutes.
6
Garnish with sliced cucumber and lime wedges before serving.
