Ingredients
- 1 tablespoon dried oregano
- 1 teaspoon chili powder
- 3 tablespoons extra-virgin olive oil
- 1 (6 ounce) package feta cheese, cubed
- 1 cup water
- 1 cup couscous
- 1 medium cucumber, seeded and chopped
- 1 medium tomato, chopped
- 1 medium green bell pepper, chopped
- 1/4 medium red onion, chopped
- 1/4 cup pitted black olives
- 1/4 cup pitted green olives
- 2 tablespoons extra-virgin olive oil
- 1 clove garlic, minced
- 4 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon white wine vinegar
- 1 tablespoon soy sauce

Preheat a cooking vessel to a minimal temperature setting. Add dried oregano and ground chili powder to the empty, hot cooking vessel; cook and stir constantly until aromatic and lightly browned, approximately 1 minute. Take the cooking vessel off the heat source and combine with olive oil. Pour over crumbled feta cheese and allow it to infuse for at least 30 minutes.

In the meantime, heat a container of water to its boiling point. Pour the boiling water over the pre-cooked couscous and cover it with a lid for 10 minutes.

Combine diced cucumber, chopped tomato, sliced bell pepper, minced onion, pitted black and green olives, 2 tablespoons of oil, and minced garlic into the warm couscous.

Mix together oil, balsamic vinegar, white wine vinegar, and soy sauce for the salad dressing in a separate container. Pour the dressing over the salad.

Arrange the marinated feta on top of the dressed salad and serve.
